Lamb and Egg Meatball Tajine (Kofta Tajine)

I just used my tajine for the first time and I'm as excited as a kid with new shoes. This is a typical recipe from Arab cuisine.
The recipe is very impressive. First, when you present the tajine at the table with its beautiful shape, and then when you open it to reveal the heavenly sight of meatballs with eggs, sprinkled with cilantro and parsley.
I served it with white rice (though I'm not sure if that's traditional...) and with pita bread that my brother bought fresh and warm from Lavapiés. He brought both oven-baked and pan-cooked bread. I prefer the pan-cooked one:

Cooking Instructions

In a bowl, combine all the ingredients for the meatballs:

Mix well with your hands and form walnut-sized meatballs. I made about 21 meatballs.

In another bowl, combine the canned tomatoes, tomato paste, and honey and mix well.

Add 2 tablespoons of oil to the tajine and fry the meatballs. Let them cook well on one side before turning. Don't stir them. Once fried, remove and set aside.

In the same oil, sauté the onion until golden, then add the reserved meatballs, the tomato mixture, and the peas. Mix very carefully. I gave the tajine a few shakes. Cover and let cook for 10 minutes.

After this time, place 3 eggs over the meatballs, cover, and let cook for another 10 minutes.

After 10 minutes, this wonder is ready. Sprinkle with cilantro and parsley and serve.

It is from a old cook book called "Caf´e marocain". This makes a great dish for a dinner party you can cook it in advance and can sit a the table with your friends. Usually meatballs are a bit of a hassle to make - especially if they need a tomato sauce to go with them. This recipe was inspired by wanting something super tasty, freezable (so I can use for a future meal) and quick to make. Most online lamb meatball recipes (and I consulted a few 😉) use the traditional frying ball method, but lamb is already fatty enough. And, as I found out today, oven works fine 😊. Since this recipe requires quite a few ingredients (it is worth it - trust me!!) and I know how precious time is to us all, I recommend making more than you need, and either freezing the mixture itself, or the meatballs once cooked, for a future meal.
