Ingredients

  • 2 cupsSweet Potato, mashed
  • 1⁄2 stick Unsalted Butter, room temperature
  • 1⁄2 cup Milk
  • 2medium Egg
  • 1 teaspoonVanilla Extract
  • 1⁄2 teaspoon Salt
  • 1 cupSugar
  • 1 cupBrown Sugar
  • 1 cupFlour
  • 1 cupChopped Pecans
  • 1⁄4 cup Pecan Halves
  • 2 sticksUnsalted Butter, melted and cooled

Steps

  1. 1

    Blend the first seven (7) ingredients in a large bowl until smooth but firm. Do not over blend or casserole will be runny.

  2. 2

    Add sweet potato mixture to a shallow baking dish.

  3. 3

    Mix together brown sugar and flour very well in a separate bowl.

  4. 4

    Add the nuts into brown sugar mixture and mix well.

  5. 5

    Layer brown sugar and pecan mixture over the top of the sweet potatoes.

  6. 6

    Drizzle melted butter over the top of the casserole.

  7. 7

    Bake for 20 to 30 minutes until firm.
