Start by whisking the sugar and water together until the sugar dissolves then add your lemon juice (it prevents the shugar from forming crystals) cover the pan and allow it to boil over medium heat till it turns Amber brown

Then whisk in your butter make sure you take the pan off the heat as the caramel will bubble up aggressively

Then add your cream and salt and mix.

Your caramel is ready it will thicken up again after cooling to room temp

You’ve to be very careful so as not to end up with a burnt caramel
