Steps

Set up a steamer on the stove and preheat..Whisk the eggs and sugar together until pale and an ‘8’ stays on the the surface for a couple of seconds.

Sift and fold in the flour in three portions, taking care to completely fold in the flour before the next addition.

Take a dollop of batter and mix with oil. Return this mixture to the batter and fold in.

Pour into an oiled dish (I used a deep 6” cake tin as that’s what fits in my steamer but mum used to use a glass dish) and steam over a medium/high (high simmer to almost rolling boil) heat for 15-20mins or until a skewer comes out clean.

Slowly remove lids making sure condensation drips do not drip over cake. Brush a little veg oil over the top and turn out to cool slightly before serving.
