Ingredients

4 persons
  1. 650 gGrey Mullet fish. Clean,wash, slash on top or cut into 4-6
  2. pieceswide cutlets
  3. Sprinkle with salt & lemon juice all over& leave to marinade 10'
  4. Gulai Vegetables yellow:
  5. 3fresh red chilies
  6. 2 clovesgarlic
  7. 1medium size white onion, finely chopped
  8. 1lemongrass crushed at the base, tied top the part green
  9. 4 cmginger crushed, sliced thinly
  10. 4 cmturmeric crushed or 1/2 tsp ground turmeric
  11. 1/2 tspground coriander
  12. 1 tspwhite pepper powder
  13. 2 tbstamarind puree(or 3 tbs white vinegar)
  14. 1 tbssoft brown sugar
  15. Salt
  16. 1/2 tbsa parcel Indofood 'Gulai Ikan paste'
  17. 4 leavesKaffir lime, teared at the leaves edge
  18. 1/2 canCoconut cream
  19. 2cups/more warm water from the kettle
  20. Rice Bran oil for deep-fry
  21. 2Potatoes, peeled cut into small cubed,steam for 20'
  22. 1 handfulfrozen peas, parboil for 5'
  23. 1fresh tomato cut into chunks
  24. 1Red Capsicum, slice 2cmx1cm
  25. 4 TbsExtra Virgin Olive Oil for stir fry
  26. 2 cupsJasmine rice cook in Rice cooker

Steps

    Clean, scaled & wash the fish.Sprinkle all over with salt and lemon juice. With a sharp knife cut into big pieces. Marinade for 10' then fry until golden brown in hot oil. Remove & set aside.

    In a blender put the onion, garlic, ginger chilie, salt: blend them into a smooth paste. Set aside. Set aside. Cook the Rice in a Rice Cooker.

    In a wok w 3 tbs oil, fry the Fish paste and the onion mixture paste, until fragrant & oily, then add kaffir leaves, lemongrass, ginger, ground turmeric, ground coriander and stir fry for a few minutes.Quickly put 2 cups water, tomato red Capsicum, Peas, mix all well & bring mixture to the boil then add sugar, tamarind or vinegar, coconut cream and salt: mix & stirring, cook 8'.Taste the season & sugar.

    Turn off the fire and remove & transfer the cooked Yellow Veges with gravy onto a deep serving dish.Put on top the fried fish pieces. To serve: scoop the cooked Fish with own gravy on top of the steam rice with a small bunch of curly lettuce at side plate, scoop also the Green beans mixture & 1 tbs Indonesian Sambal chili on top of steamed rice.

As an ordinary housewife, I love doing home cooking & baking, or sperimenting world culinary but I'm a learner in the kitchen, so bear patience with me of my mistakes as all depend on time, availability, strength of health,moods & budget. I have to do the recipes that suites to me, to my husband, kid to my own family's preferences, so my cooking is just simple and not a restaurant style.🇮🇩 😚 I spent my childhood till teen age in Indonesia, a country that loves rice, spicy casserole with gravy, light soup bowls with sambals hot chili sauce on top. My mum cook almost daily 🐟🐋🐬fresh fish dishes, a menu that has plenty of vegetables on the table, we oftenly have snack many times a day. Delightful for us as kids to have🍍🍋🌽plenty of tropical fruits at home. In my birth city the sun shine 10 months yearly, the heavy raining season is 2-3 months approximately it depends in what zone location you are.😍My mom is passionately into cooking and I growing up got inspired and learnt from her cooking recipes, but I didnt learn much because I spent most of the time with the school programs.😍🌶Now I live with my husband in New Zealand. I couldn't find many of the ingredients from the Asian stores for my cooking, so I've tried to substitute the ingredients. The results are that the taste of my cooked dishes are not perfect to the original recipes. I've to reduce the quantity of the hot chilies as my husband or invited friends who can't eat hot meal at all but the main thing is that the dishes taste delicious & healthy.My quote: Keep on trying to improve my own cooking. Cooking is just fun and a relaxing moment to enjoy food around the table with my family 😚 🤗
