Wash, remove seeds from pepper, slice and put under the grill. Grill for about 10-15 mins on medium. Remove skin, slice and set a side

Drain chickpeas. Rinse and shake well. Put in roasting tin. Drizzle with oil, sprinkle with paprika and salt. Roast at 180 for 15 mins. Set a side

Prep the sauce ingredients. Peel garlic. Chop cucumber and dill. Whizz up everything in a chopper or food processor

Plate up. Mix chickpeas and peppers. Add sauce on top. Serve with crusty bread :)
