I discovered a new way to use Coca-Cola. I had always seen these made with beer, but I personally didn't like that. Someone suggested using Coca-Cola instead, so I tried it and loved the result.

In a bowl, mix the flour, salt, and sugar.

Add the shortening to the mixture and blend until creamy.

Pour in the cup of Coca-Cola and knead until the dough is no longer sticky and is easy to handle.

Shape the dough into balls and flatten them using a tortilla press.

Add cajeta to the center and fold the dough over. Seal the edges with a fork.

Place the empanadas on a baking sheet, brush with beaten egg, and bake for about 20 minutes at 300°F (150°C).

Once baked and still warm, roll the empanadas in cinnamon sugar. Let cool before serving.
