Makes 15 servings
  1. 2.2 poundsall-purpose flour (1 kilogram)
  2. 1.1 poundsshortening (500 grams)
  3. 1 1/2 cupssugar (about 300 grams)
  4. 1 pinchsalt
  5. 1 cupCoca-Cola (240 ml)
  6. 1egg
  7. Enough bakeable cajeta (Mexican caramel)
  8. Enough cinnamon sugar

    In a bowl, mix the flour, salt, and sugar.

  2. 2

    Add the shortening to the mixture and blend until creamy.

  3. 3

    Pour in the cup of Coca-Cola and knead until the dough is no longer sticky and is easy to handle.

  4. 4

    Shape the dough into balls and flatten them using a tortilla press.

  5. 5

    Add cajeta to the center and fold the dough over. Seal the edges with a fork.

  6. 6

    Place the empanadas on a baking sheet, brush with beaten egg, and bake for about 20 minutes at 300°F (150°C).

  7. 7

    Once baked and still warm, roll the empanadas in cinnamon sugar. Let cool before serving.
