Ingredients

  1. 1Pork Shoulder, butt or leg (5-10 lbs)
  2. Marinade
  3. 1/2 cupOlive oil
  4. 2 envelopeSazon culantro y achiote
  5. 2 tbspSalt
  6. 2 tbspFresh cracked pepper
  7. 1/4 cupSofrito (see recipe)
  8. 1 tbspCumin
  9. 1 tspOregano
  10. 5 cloveGarlic
  11. 1 largeOnion
  12. 2 tbspAdobo Goya

Steps

  1. 1

    Make finger sized holes all over pork.

  2. 2

    Place marinade ingredients in food processor until a smooth paste is reached.

  3. 3

    Cover pork in marinade especially inside holes. Cover and refrigerate overnight

  4. 4

    Next day, remove from refrigerator and let stand room temp for an hour.

  5. 5

    Place in oven , covered, 400°F degrees for 1 hr. Turn pork over and cook 1 hr per pound on 350°F . Remove cover and place skin side up, broil until skin is crunchy. (10-15 min)

  6. 6

    Remove and let it rest 30-60 min before cutting. Enjoy, goes perfect with Arroz con Gandules. ( see recipe) Buen Provecho
