Ingredients

5 servings
  1. 350 gchicken (boneless)
  2. 45 ggarlic
  3. 45g/ 3pcs chilli
  4. 10 glemongrass
  5. 30 gginger
  6. 1 pclemon
  7. 110 gshallots
  8. 2 Tbsppeanut butter
  9. 2 tbssoy sauce
  10. 200 mlcoconut milk
  11. 25 gmsugar
  12. 1 tsppepper powder
  13. To tastesalt
  14. 50 gwhite oil
  15. 10 pcssatay stick (bamboo sticks)

Steps

    At first, cut all the vegetables into small pieces. Cut the lemon into two halves to extract juice. If you don't have shallots, use onions. Cut the chicken pieces into thin strips (1cm wide). Set aside the stripped chicken pieces to marinate.

    Take a stone grinder put on salt, sugar & black pepper powder, add garlic, & ginger, add lemon juice (no water is used to make the paste), add shallots, chilli & lemongrass. Gently grind all together to make a paste. This is the authentic way to make a paste. Alternately, you may use electric grinder, but the taste might not be the same. Add soy sauce, peanut butter & coconut milk and mix all the ingredients together with the paste. Alternate of peanut butter is roasted peanut.

    Marinate the chicken pieces with the paste, use ⅔ portion of the paste, add small amount of white oil, gently mix well all together with a hand. Marinate it for at least 3hrs. However, overnight marinate gives better result.

    The leftover (⅓) paste will be used to make a sauce. Light a gas stove, take a pan, put the paste, add 1cup water and stir, add rest of the coconut milk and stir, add soy sauce and stir further, wait until the sauce will start boiling, make the sauce slightly thick. Once peanut butter sauce is ready, set aside.

    Soak the satay sticks for 45 min. Set the chicken pieces on to the satay stick in wave pattern stitches (up & down). Ideally, ⅓ of the stick length will be covered by the chicken pieces, use the leftover masala while grill the satay.

    Take a grill pan, put oil & heat. Grill the satay pieces, brushed the leftover masala, it will make more juicy. Once, one side is done, turn to the other side. Make sure that the satay grilled all the sides. It will be grilled in 10min. Uses of peanut butter & sugar gave nice colour to the satay. Highly recommended low flame while grill the satay. On high flame, the satay may burn, but not grilled properly.

    To give smoky flavour, slightly kept on flame for a while, the taste will be similar to BBQ on charcoal. Chicken satay is ready.
