A Caribbean friend taught me this recipe. Actually, this recipe doesn't use rice but orzo pasta, which looks like rice but isn't. I really liked it for its simplicity and flavor.

In a small pot, heat the clam juice over low heat (keep it warm).

Heat the annatto oil in a pan and add the garlic, being careful not to burn it. Then add the ham and cook for about 2 minutes, then add the orzo, stirring everything for another 2 minutes.

Add enough clam juice to cover the pan by 1/2 inch. Bring to a boil, then reduce the heat to medium-low.

Continue cooking, adding small amounts of clam juice as needed to cover the orzo until the pasta is tender but still firm, about 6-8 minutes. Season with salt and pepper to taste.

The pasta should have a creamy consistency with very little or no liquid. Serve garnished with chopped parsley.
