Ingredients

  1. 1 Tbspolive oil
  2. 1-2 clovesminced garlic
  3. 1/2-1whole white or yellow onion, minced
  4. 2-3celery stalks, chopped
  5. 2carrots, chopped
  6. 1 bunchlacinato (Tuscan) kale, stems removed and leaves chopped
  7. 1 lb.lean ground beef
  8. 1 canfire roasted diced tomatoes
  9. 1/4 cupgrated Parmesan cheese, plus more for serving
  10. to tasteSalt & pepper
  11. 1 lb.whole wheat spaghetti, cooked according to package directions
  12. 1-2zucchini’s, spiralized, if using

Steps

  1. 1

    In a large sauté pan, heat olive oil over medium heat. Add onion and garlic and sauté until onion starts to soften.

  2. 2

    Add celery and carrots and cook until soft, or desired consistency. Salt and pepper to taste.

  3. 3

    Add ground beef to vegetables, salt and pepper, and heat until meat is cooked through and mixed in with the vegetables.

  4. 4

    Add the fire roasted diced tomatoes and more pepper, mix and heat through. Then add the chopped kale, in batches if needed, stirring to thoroughly mix until kale is wilted. Remove from heat.

  5. 5

    Mix in at least 1/4 cup shredded Parmesan cheese.

  6. 6

    Serve over cooked pasta or zucchini noodles, top with more Parmesan if desired.
