Well, pumpkin is not a vegetable that my son enjoys too much (unless it’s put in Sambar!). So wanted to try some ingenious way to get him to eat it :) hence this pumpkin bread - I use purée of pumpkin, which goes down so easily in the form of a cake/bread. Try it - ur Lille ones will lap it up!

Ingredients

  1. 1 1/2 cupall purpose flour
  2. 1 1/2 tspbaking powder
  3. 1/4 tspbaking soda
  4. 1 tspground cinnamon
  5. 1/4ground nutmeg
  6. 1/4 tspground cloves
  7. 1 cupgranulated sugar
  8. 1 cuppumpkin puree
  9. 1/3 cupflavourless oil (can use olive)
  10. 1/2 cupmilk or buttermilk
  11. 1 tspvanilla essence / extract
  12. Oil and flour to dust pan
  13. 3 tbsppumpkin seeds (for garnish)

Cooking Instructions

    Preheat oven to 180 degrees c. Positions rack in the middle - grease a loaf pan

    In a medium mixing bowl, Sift all dry ingredients together twice, from a height. Add salt whisk and set aside

  3. 3

    Add all wet ingredients in a medium sized bowl, whisk until u have a homogenous mixture

  4. 4

    Add all wet ingredients to all dry ones. Fold gently until combined and no flour pockets are visible

  5. 5

    Transfer batter to baking pan - tap to remove air bubbles. Sprinkle pumpkin seeds on top. Bake for 55-60mins or till toothpick comes out clean
