Grilled chicken served with Quinoa

Coriander roots is a special ingredient in Thai sauces.
I first read about using the coriander roots to make the paste.
(raak phak chee grathiiam phrik thai ; รากผักชีกระเทียมพริกไทย)

It is pungent, garlicky and sharp all at the same time. It is great for grilled chicken.

For today’s recipe, I decided to change this traditional paste to include ginger and added water and oil to make it more liquid and suitable as a marinade for meats or a dip to grilled meats.

This grilled chicken goes well with any rice or even pasta.
I still have some quinoa so today’s chicken is paired with quinoa instead.

It is pre-rinsed and toasted and only needs 15 minutes to fluff up.

If you are using unwashed quinoa, please soak at least 30 minutes to remove the saponins.
Do not use this soaking liquid.

Saponins are a naturally occurring phytochemical that give unwashed quinoa a bitter taste. Saponins act as the quinoa plant's natural protection from pests, however, the bitter flavor they produce is also a mild digestive irritant.

You can use either water or stock to cook Quinoa.

Ingredients

  • Grilled chicken
  • 3drumsticks
  • Salt
  • 1 tbswine
  • 1/2 tspsugar
  • Coriander Ginger sauce
  • 3-4 stalksCoriander including roots
  • 2 cmGinger
  • 1/4 cupwater
  • 2Garlic
  • 3 tbsrice bran or canola oil
  • 3-5white peppercorns
  • 1 tspsugar
  • 1 tspHimalayan pink salt
  • Quinoa (Ratio Quinoa: Liquid=1:2)
  • 1/2 cuptricolour quinoa, pre rinsed & toasted
  • 1 cupwater
  • 1the light sesame/rice bran /canola oil
  • leavesCoriander, stems and

Steps

  1. 1

    Washed the chicken and seasoned with salt for 30 minutes. Add wine and massage the drumsticks. Add enough coriander sauce & sugar to the chicken. Massage again!!!! Put in the refrigerator, preferably overnight or at least 4-6 hours. (The wait is worth it). Grill 30 minutes.

    Blend all the ingredients for the coriander sauce in a food processor. Blend till all is well mixed. Pour into a sterilised glass container.

    Pour quinoa and water into a small sauce pan. Boil water and cover pan. Cook for 15 minutes on medium heat. After 15 minutes, fluff the grains and stir in the oil using a spatula. Stir in some coriander. Cover the pan and let the aroma infuse the quinoa.

    Put the quinoa on the plate. Arrange the grilled chicken in the centre of the plate. Pour the sauce over the chicken. Garnish with some more Coriander leaves and stems. You will be left with some quinoa that you can use for another salad.
