Ingredients

  1. Baked katoris
  2. 3/4 cupwheat flour
  3. 1/8 cupfine semolina
  4. 1/8 cupjowari flour
  5. Pinchbaking soda
  6. Pinchbaking powder
  7. 1/4melted ghee
  8. 2 teaspoonsJaggery powder
  9. 3green chillies chopped
  10. 2 tablespoonsCoriander leaves chopped
  11. 2-3curry leaves chopped
  12. 1 teaspoonsalt
  13. 3 tablespoonsyogurt
  14. Russian salad filling
  15. 1 cupmoong (green lentil) sprout, steamed or raw as per choice
  16. 1big carrot grated
  17. 1/2 pieceyellow and red bell pepper
  18. 1/2 piececapsicum
  19. 1/2 cupCabbage
  20. 3/4 cupthick hung curd
  21. 1/2 teaspoonmustard paste
  22. 2 tablespoonsCoriander leaves chopped
  23. 1/8 cuptomato sauce or puree
  24. 1/3 cuppineapple pieces
  25. As per tasteSalt and pepper
  26. for garnish
  27. 1 tablespooneach chopped tomato, onion coriander leaves
  28. 1 teaspoonChaat masala

Steps

20 minutes

    Method for making Katoris; Sift together baking powder, soda, salt and flours.

  2. 2

    In a bowl add flour mixture + melted ghee. Mix everything with your fingertips to make crumble like texture.

    Now add chillies coriander and curry leaves and yogurt and prepare a tough dough.

  4. 4

    Keep the dough covered for 10 minutes. preheat oven In the meantime, On 180C

  5. 5

    I flipped my cupcake tray and used the inverted moulds to make cups for the chat. I greased them with little oil so that the katori comes out easily.

  6. 6

    Roll the dough like a thick puri and cut big circles enough to cover the muffin cups.

  7. 7

    Bake for 15-20 minutes or till golden brown colour.

  8. 8

    Let them cool and then add filling. Can store it airtight container for later use.

  9. 9

    Method for Russian salad;
    Mix all ingredients listed under salad preparation, leaving the items for garnish to add in the end while serving. Mix and adjust seasoning according to taste.

    Take cooled katori's, fill them generously with the salad, add garnish, sprinkle chaat masala on top and serve.
