To make two cheese burgers: • square slices Cheddar cheese • peeled large purple eggplant, 1/4 inch thick (6 mm) • fresh large heirloom tomato, 1/4 inch thick (6 mm) • mild large onion, 1/8th inch thick (3 mm) • large mushroom, 1/8th inch thick (3 mm) • large avocado, 1/4 inch thick (6 mm) • whipped fresh farm eggs with Tbs balsamic vinegar, tsp dry mustard, pinch of pepper and salt, (optional sprinkle of truffle) • breadcrumbs mixed with tsp sesame seeds, Tbs parmesan cheese • all purpose flour mixed with Tbs oregano • Fine mist spray of olive oil
