Ingredients

  1. 2-3tortillas
  2. 5-6” circle cutter
  3. 2eggs
  4. 2-3 tbspChorizo (cut to small cubes)
  5. 2-3 tbspvegetable cooking oil
  6. 2 tbspfeta cheese (cut into small cubes)
  7. Sriracha sauce/Tabasco
  8. Coconut Sweet corn
  9. 2 tbspdesiccated coconut
  10. 1 clovegarlic finely chopped
  11. 1 tspsugar
  12. Salt and pepper
  13. guacamole
  14. 1avocado
  15. 1 tbspchopped coriander
  16. 1tsp(chopped) chilli (optional)
  17. 2 tbspfine chopped shallots or red onion
  18. Halflime (juice)
  19. Salsa
  20. 1large tomato (finely chopped)
  21. 1 cupfine chopped shallots or red onion
  22. Halflime (juice)
  23. 1 squeezeSriracha sauce
  24. 1 tspfinely chopped chilli
  25. to tasteSalt and pepper

Cooking Instructions

    Prepare all ingredients

    Fry chorizo with a little bit (1tsp) of cooking oil and leave it aside

  3. 3

    On a small saucepan, medium heat then add desiccated coconut stir until they turn golden brown then add garlic, sugar, salt and pepper. Mix them all well and put in a bowl.

    Making guacamole, mash avocado in a bowl the. Add garlic, shallots, chilli, coriander and lime juice. Mix well

    Making salsa, put tomatoes, shallots, coriander, salt and pepper and lime in a bowl and mix well

    Fry two eggs on a pan. Keep them on a plate

  7. 7

    Cut up tortilla by using the round cutter then fry them on the same pan as the eggs

  8. 8

    Time to resemble, put tortilla on, add guacamole, salsa, chorizo and repeat until you get to 3-4 layers.

    Garnish with coriander and feta cheese. Add your fried egg on top. Drizzle some Sriracha sauce or Tabasco if prefer. Enjoy!!!
