Ingredients

4 servings
  1. For the roasted cauliflower
  2. 1large head of cauliflower
  3. 2 tbspvegetable oil
  4. 2 tspgaram masala
  5. 1/2 tspchili powder
  6. 2 tspground coriander
  7. 1/2 tspturmeric
  8. 2 tspsalt
  9. For the tikka masala curry
  10. 1onion finely chopped
  11. 4garlic cloves, crushed
  12. 2 tspgaram masala
  13. 2 tsppaprika
  14. 2 tspground coriander
  15. 1 tspground cumin
  16. 1 tspturmeric
  17. 1/2 tspchili powder
  18. 1/2 tspground cardamom
  19. 400 gcrushed tomatoes
  20. 2 tbsptomato paste
  21. 1 cupheavy cream
  22. 2 tbspbutter
  23. 1 tspsugar
  24. to tasteSalt and pepper

Cooking Instructions

    Preheat the oven to 200 C

    Slice the cauliflower floret off the head of cauliflower. Chop the remaining stalk into bite size pieces. Place them into a large roasting tray and drizzle over the oil and season with the spices then place into the oven and roast for 30 minutes until golden brown and cooked.

    In the meanwhile start making the sauce. Fry the onions in the oil until soft and translucent then add the garlic and ginger and fry for another 30 seconds.

    Add all the spices and fry for a minute before adding the tomatoes and tomato paste. Simmer for 5 minutes then add the cream and sugar then simmer for 10 minutes.

    Add the roasted cauliflower and butter and stir together then allow to simmer for 5 minutes. Season to taste and serve.
