Larb Moo (Minced Pork Spicy Salad)

This Thai dish is my favourite dish ever. I love this dish so much that I needed to have it almost every week from the young age. There’s the street stall next to my home in Thailand and I was the regular. I stood in front of the lady and watched her make it every single week. So believe me this recipe is awesome. Cook it step by step and you will get authentic delicious Thai Larb dish. I am eating Larb Moo with yummy sticky rice.
Just a tip from me: Don’t buy minced pork. Do mince pork loin yourself with food processor. #eatthaivisitthai

Cooking Instructions
- 1
Making Crushed toasted rice by dry toast the rice then crush it in mortar & pestle.
- 2
Prepare all ingredients
- 3
Optional: toast dry chillies in a little oil until they smell nice. Don’t burn them.
- 4
Add minced pork & water into the sauce pan and cook the pork until it’s just cooked. Or you can add minced pork into the boiling water. It won’t take long to cook and don’t cook it too long as the pork will be tough. When it’s cooked turn off the heat. Then drain the water out of the pan and leave only around 2 Tbsp of cooking water in the pan with the pork.
- 5
Add lime juice, fish sauce, pinch of salt, sugar and crushed toasted rice. Mix them.
- 6
Add red onion, chilli flakes, coriander, mint and toasted dry chillis in the pan. Mix them together.
- 7
Now it’s ready to be served.

Vietnamese Noodle salad/bowl Vietnamese Noodle salad/bowl
My doctor was mad at me because I gained a few pounds, instead of losing a lot of pounds. So I am trying some new, healthy recipes out. A Vietnamese sandwich place had this, only one near us, but it is underwhelming, to say the least. So I decided to try it. Boy am I glad I did. This is typically served at room temp. This turned out so good, and my blood sugar was good the next morning, a real win in my book. I love the freshness of this, and the flavors. This is more geared to come close to the real thing, but using ingredients easy to find in American stores. I like it spicier, so I did drizzle some hot sauce on my bowl. The wife liked it just this way with only the Vietnamese sauce I made here. There are a lot of steps, but you will find most only take a few minutes. And if you combine some steps, like blanch your veggies in the boiling water, remove them and then add the noodles, you can save a bunch of time. Fo Fa -

Laab, a delicious northeastern Thai salad that is slowly gaining more recognition abroad, is most often served with minced pork. Other popular versions are made with minced beef or catfish, but this vegetarian-friendly version – whipped up with meaty mushrooms – is a fabulous alternative that’s insanely addictive.
