Vietnamese Noodle salad/bowl

My doctor was mad at me because I gained a few pounds, instead of losing a lot of pounds. So I am trying some new, healthy recipes out. A Vietnamese sandwich place had this, only one near us, but it is underwhelming, to say the least. So I decided to try it. Boy am I glad I did.
This is typically served at room temp. This turned out so good, and my blood sugar was good the next morning, a real win in my book. I love the freshness of this, and the flavors. This is more geared to come close to the real thing, but using ingredients easy to find in American stores. I like it spicier, so I did drizzle some hot sauce on my bowl. The wife liked it just this way with only the Vietnamese sauce I made here.
There are a lot of steps, but you will find most only take a few minutes. And if you combine some steps, like blanch your veggies in the boiling water, remove them and then add the noodles, you can save a bunch of time.

Ingredients

60 minutes
2 servings
  1. Meat
  2. 1/4-1/3 poundmeat (pork here)
  3. 1 Tblfish sauce
  4. 1 Tblsoy sauce
  5. 2 clovesgarlic
  6. 1 Tbllime juice (lemon or vinegar sub.)
  7. 2 tsp.sugar
  8. 1 Tbllemon grass
  9. 2-4 tsp.hot sauce (optional)
  10. 1 tsp.corn starch (optional)
  11. Sauce
  12. 1/4 cupsugar
  13. 1/2 cupchicken broth (or water)
  14. 2garlic cloves
  15. 5 Tblfish sauce
  16. 2 Tblvinegar (rice vinegar if you have it)
  17. 1-2 Tbllime or lemon juice
  18. fresh hot chili (optional)
  19. Main
  20. 4 ouncesdry noodles
  21. 4spring rolls
  22. 3-5veggies your choice

Steps

60 minutes

    Prep the protein

    Pork is a normal meat for this, but chicken, beef, lamb works well. I am trying tofu next time.

    Cut your protein into bite size pieces of your choosing.

    Add lemon grass, this is what I use, since actual lemon grass is not easily available. If you can't find it, leave it out. It will still taste great.

    Add the rest of the meat ingredients, mix well. Cover and let set 30 minutes to an hour.

    Prep the sauce

    If you are using a hot chili, thinly slice.

    Mix all sauce ingredients, set aside.

    Get the cooking steps done

    If you have any that require blanching, do that now, cool immediately. Use water for noodles if using noodles.

    Prepare noodles per package directions, to el dente.

    Drain noodles, wash to cool down, mix a tiny bit of oil in to stop it from sticking, set aside

    Now would be a good time to assemble your spring rolls, this is how I did it 😉

    Cook pork in a skillet/wok/stir-fry

    Set aside to cool

    Cook spring rolls, set aside to cool, I used my air fryer for this

    Assemble

    Julian cucumber, carrot and any other veggies that require it.

    Clean some lettuce (green leaf here, it seems to work the best, really) and place the leafy parts in your bowls.

    Cut your spring rolls, I found the least crumble way is to put the point of the knife in, then cut down. Finish the cut. You still crumble a little, but not as much as just slamming through it.

    Put your noodles or rice in the center of the lettuce. Place all the other things around, pretty easy.

    Pour the sauce in to your liking, mix it all up.

    Veggies; cucumber and carrots seem to always be in this. I used sugar snap peas here, asparagus, avacados, spinach (wilted) just some more options. Thin sliced red onion, green onion, many options to choose from.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
