Watermelon Rind Subzi

Ingredients

  1. 1 bowlchopped watermelon rind (white part)
  2. 1 tbspoil
  3. 1 tspmustard seeds
  4. 1/4 tspturmeric powder
  5. 1 tspred chilli powder
  6. 1 tspcoriander cummin seeds powder
  7. 2 tspjaggery
  8. to tasteSalt
  9. As neededFinely chopped fresh coriander leaves

Cooking Instructions

    Peel off the green part of watermelon rind. Chopped white part rind along with little thin layer of red juicy watermelon fruit. In kadhai heat oil. Add mustard seeds as they splutter, add turmeric powder. Add chopped watermelon rind.

    Add salt and 1/2 glass of water. Mix, cover and cook for 10-12 mins or till chopped watermelon rind pieces are tender.

    Add red chilli powder, coriander- cummin seeds powder and jaggery. Mix and cook for 2 minutes.(If there is more water in subzi,cook for few minutes more)

    Sprinkle finely chopped fresh coriander leaves and Serve/ Relish Delicious Hot Watermelon Rind Subzi with dal & rotis.
