Ingredientes

  1. 3large potatoes
  2. olive oil, for brushing and drizzling
  3. 1quantity pizza dough (read the recipe for pizza dough)
  4. all-purpose flour, for dusting
  5. generous 1 cup pancetta, diced
  6. 3 1/2ounces Taleggio cheese, diced
  7. 2ounces Parmesan cheese, shaved
  8. 2tablespoons chopped fresh rosemary
  9. salt and pepper

    Cook the potatoes in salted, boiling water for 20 minutes until tender

    Drain, peel and thinly slice

  3. 3

    Preheat the oven to 425 ºF

  4. 4

    Brush a cookie sheet with oil or line with baking parchment

  5. 5

    Roll out dough on a lightly floured surface, then press out on the cookie sheet

  6. 6

    Arrange the slices of potatoes on top and drizzle with oil

  7. 7

    Bake for 15 minutes, then sprinkle with the pancetta, cheeses and rosemary and season with salt and pepper

  8. 8

    Drizzle with oil and bake for 7-8 minutes more, serve hot
