Baked cod in red pepper sauce

Ingredients

30-40 minutes
  1. 4cod loins
  2. 1red pepper
  3. 200 gtinned or fresh tomatoes
  4. 100 gcreme fraiche
  5. 2courgettes
  6. Mangetout
  7. Halftsp Italian herbs
  8. Halftsp Garlic puree
  9. Halftsp chili flakes
  10. Parmesan cheese

Cooking Instructions

30-40 minutes
  1. 1

    Gather ingredients and turn oven to 180 degrees

  2. 2

    Slice and the red pepper, add garlic, herbs and chili

  3. 3

    Place in food blender with tomatoes and make smooth

  4. 4

    Add Parmesan and creme fraiche

  5. 5

    Cut vegetables into thin strips and line base of baking dish

  6. 6

    Add the cod fillets then cover with sauce & grate Parmesan on top

  7. 7

    Bake for 30 - 40 minutes. Serve with roast new potatoes or sweet potato fries.
