Gutti vankaya Koora is Andhra style stuffed eggplant curry. It is prepared with tender eggplants. Eggplants are stuffed with peanuts, sesame seed and desiccated coconut added which some spices. All the spices are roasted and even some tamarind pulp is added to it which it makes it a little sour. This spicy and a little tangy curry is a delicious addition to the meal. Roasted spices give it a very good flavour and fresh taste. This curry is served with sorghum or millet roti. It can be even served with plain rice.

Ingredients

  1. forRoast and grind -
  2. 2 tbspground nuts
  3. 1 tablespoonsesame seed
  4. 1/2 tablespoonwhole coriander
  5. 1/4 teaspooncumin
  6. 1/4 teaspoonfenugreek seed
  7. 1 inchcinnamon
  8. 2cloves
  9. 2cardamoms
  10. 2dry red chillies
  11. 2 tbspdesiccated coconut
  12. 1 tablespoonred chilli powder
  13. For curry -
  14. 6small tender eggplants
  15. 1 tbsptamarind pulp
  16. 4 tbspoil
  17. 1/2 teaspoonmustard
  18. 1/2 teaspooncumin
  19. 1/2 teaspoonurad daal
  20. 8-10curry leaves
  21. 2green chillies
  22. 1/2 teaspoonginger paste
  23. 1/2 teaspoongarlic paste
  24. 1/2 teaspoonturmeric
  25. 1onion
  26. 1tomato
  27. As per taste Salt
  28. 2 tbspcoriander leaves

Cooking Instructions

    Dry roast groundnuts on medium heat. Take it out in a bowl and in the same pan dry roast sesame seeds. Now roast coriander and cumin.

    Roast whole spices and whole red chillies. Now in the same pan add desiccated coconut and turn off the heat. Keep stirring. With the heat from the pan coconut will be roasted. Take all these roasted spices in one bowl and let it cool down.

    Now grind all these spices to a powder and add red chilli powder to it and mix. Now add tamarind pulp to it and mix everything well. Wash eggplants and make a cut from the bottom. Stuff eggplants with this spice mix.

    Heat oil in a pan and add mustard seeds. When it crackles add cumin, udad daal and curry leaves. Now add sliced onions to it and saute until pink in colour. Now add ginger, garlic paste and chopped green chilies. Mix everything well and add turmeric, salt and chopped tomato. Cook until tomato is soft.

    Now add stuffed eggplant to the pan and let it fry until 2 minutes. Add the remaining spice powder to it and mix well. Now add one cup of water and cover and cook it on medium heat. Stir it occasionally and add more water if required. Cook it until well done. Add coriander leaves and turn off the heat.

    Serve this eggplant curry with rice, dosa or paratha.
