Ingredients

20-25 minutes
3-4 people
  1. For Kachori dough
  2. 2 cupsall-purpose flour
  3. 1/4 cupclarified butter
  4. Pinchsalt
  5. For filling
  6. 1/2 cup yellow moong dal
  7. 3 tbspoil
  8. 1 tspcumin seeds
  9. 1/4 tspasafoetida
  10. 1 tspginger-garlic and chilli paste
  11. 1 tspRed chilli powder
  12. 1 tspgaram masala
  13. 1 tbspraw mango powder
  14. 2 tbspgram flour
  15. to tasteSalt
  16. As neededOil to fry

Cooking Instructions

    Take a deep bowl and mix flour, salt and butter. Use water to knead it into a soft dough. Cover it and keep it aside for 15-20 minutes.

    Prepare a coarse mixture of moong dal by grinding it without water.

    Heat some oil in a pan. Add cumin seeds and as try crackle add asafoetida and moong dal mixture.

    After cooking for a few minutes, add ginger-garlic chilli paste, garam masala, chilli powder, raw mango powder, gram flour and salt to taste.

    Stir continuously and cook for 5 minutes till it turns golden brown. Keep it aside and let it cool.

    Take a small portion of the dough. Roll it in a circle and place the moong dal stuffing in the centre.

    Seal from all sides and flatten a little bit. Make more kachoris like this.

    Now heat oil to fry in deep pan. Put at least three kachoris at one time and cook for 8 minutes at low flame.

    Let them in oil till they turn golden brown. Place it on absorbent paper and serve it hot with green chutney.
