Ingredients

  1. 4 cupsrice
  2. 1medium onion sliced
  3. 1 tbspginget garlic paste
  4. 2 tbspgreen chilli paste
  5. 1/2 tspblack pepper
  6. 2 tspsalt
  7. 1/2 cupoil
  8. 1 tspcumin seeds
  9. 2aloo bukharay
  10. 2green cardamoms
  11. 2 tbspfried onions
  12. Ingredients for stock
  13. 500 gmutton
  14. 2 tbspcoriander seeds
  15. 2 tbspfennel seeds
  16. 1cinnamon stick
  17. 2black cardamoms
  18. 8cloves
  19. 8black peppercorns
  20. 2bay leaves
  21. 1 inchpiece of ginger
  22. 5 clovesgarlic
  23. 1medium raw onion
  24. 1medium tomato
  25. 3 litreswater

Cooking Instructions

    In a large pot add all the ingredients of stock and cook until meat is tender

    Strain the stock set aside

    In a separate pot heat oil and fry onions until golden and add cumin and green cardamom

  4. 4

    Add boiled mutton, yogurt, green chilli paste, alu bukharay and spices and mix well.

    Add soaked rice and stock and cook until rice are 3/4th done

  6. 6

    Now cover with lid and cook on dum for 5 minutes

  7. 7

    Serve hot
