This is my favourite take away Chinese but with lockdown we thought that we would try it ourselves. Turns out it’s a great recipe!!

Ingredients

2 servings
  1. 200 gnoodles (I used oodon but you can use rice too)
  2. 2.5 cupschicken broth
  3. 500 gmince chicken or pork
  4. 1 packetshiitake mushrooms
  5. 1 packetbaby spinach
  6. 2spring onions
  7. 1big shallots
  8. 3gloves garlic
  9. Chilly oil to serve
  10. For the sauce
  11. 1 tablespoonhoney
  12. 3 tablespoonrice vinegar
  13. 1/3 cuphoisin sauce
  14. 1/2 cupsoy sauce
  15. 3 tablespoontahini

Cooking Instructions

    Make the sauce by mixing all ingredients together. Set aside

    Chop everything: onion, garlic, mushrooms ready.

    Cook the noodles as per the instructions on the packet and drain the water away.

    In a frying pan add some sesame oil and cook the mince meat breaking it up as you go along. Cook until it’s turned a lighter colour (seared). Add the onions, garlic and mushrooms and cook for another few minutes. Add 1/2 sauce and cook it through until the meat caramelised. Add 2/3 teaspoon of chilly oil

    In a pot prepare the broth and add the rest of the sauce. Bring to a simmer and add the spinach for a minute and the noodles so that they warm up.

    Serve in big bowls starting with ladling the broth. Add the meat on top and finish with the spring onions and some more chilly oil
