Ingredients

30 minutes
3-4 servings
  1. 1eggplant
  2. 1 tbsptblspn garlic finely chopped
  3. 1/2 tsptspn ginger finely chopped
  4. 1-2medium size onion
  5. 1/2 cupgreen garlic
  6. 1/2 cupfinely chopped tomatoes
  7. 2 tbsp.tblspn Kashmiri red chilli powder
  8. as per tasteSalt
  9. as requiredOil
  10. as requiredSome spring onion

Cooking Instructions

30 minutes
  1. 1

    Apply oil on brinjal and slightly cut it. Roast it on the direct flame. Remove the skin and mash it.

    Take a pan. Add oil. Add finely chopped onion and garlic. Saute.

  3. 3

    Add some spring onion. Add turmeric and red chilli powder. Continue to cook on low heat. Add tomato puree.

  4. 4

    Continue to cook some more time. Add mashed brinjal. Mix it well. Without covering continue to cook on low heat.

  5. 5

    Sprinkle with some coriander leaves and spring onion. Serve.
