Ingredients

  1. Carrot cake
  2. 250 mlwhite sugar
  3. 250 mlbrown sugar
  4. 200 mloil
  5. 5 mlvanilla essence
  6. 4eggs
  7. 500 mlcake flour
  8. 10 mlbaking soda
  9. 2.5 mlsalt
  10. 7.5 mlground cinnamon
  11. 750 mlpeeled grated carrots
  12. 100 gpecan nuts
  13. As neededSpray & Cook
  14. Cream cheese frosting
  15. 250 gcream cheese
  16. 300 mlicing sugar
  17. 30 mllemon juice
  18. 80 mlwhipping cream

Cooking Instructions

    Preheat the oven to 180°C. In a bowl beat the white sugar, brown sugar, oil and vanilla essence.

    Add the eggs one by one and beat until smooth.

    In a bowl sift the cake flour, baking soda, salt and ground cinnamon.

    Gently fold the flour into the egg mixture.

  5. 5

    Chop the pecan nuts. Add the grated carrots and chopped pecan nuts to the batter.

    Grease a cake tin with Spray & Cook. Pour the batter into the greased cake tin. Bake for 45-60 minutes in preheated oven (180°C). Remove from tin and let cool completely.

    Frosting: Beat the cream cheese. Add the icing sugar and beat.

  8. 8

    Add the lemon juice and cream to the frosting and beat.

  9. 9

    When the cake is completely cool. Decorate the cake as you like.
