Cooking Instructions

For dosa batter _wash and soak dal, rice,fenugreek seeds in enough water and soak about 4 to 5 hour. After soaked properly grind it with fenugreek seeds and poha in grinder jar,make smooth batter and cover with lid and rest about 8 to 10 hour or over night in a warm place for fermentation.

For stuffing masala - In a voke add oil when hot add hing and mustard seeds when cracked add chana dal,urad dal,curry leaves,stir 1 minute now add chopped onions saute 2 min now add spices and boiled mashed potatoes. Add gun powder and mix well.

Mash properly and add lemon juice or tamarind pulp and sprinkle green coriander chopped. podi masala ready.

For dosa - heat nonstick tawa sprinkle some water to tempring heat.when water evaporates pour spoonfuls of batter spread on tawa properly. Apply oil or butter cook 2 min now spread gun powder and spoonfuls aloo stuffing and cook until bottom side golden brown in texture.

Fold dosa and serve with coconut chutney,idli and sambhar as you like.
