Ingredients

  1. 1 1/2 cupBasmati rice
  2. 3/4 cupcoconut grated
  3. 1medium size onion
  4. 3green chili
  5. 1 tspginger garlic paste
  6. 4 tspcoriander leaves
  7. 2 tspmint leaves
  8. 6 tbspoil
  9. 2 tspghee
  10. to taste Salt
  11. whole spices
  12. 1 tspsaunf/ Fennel seeds
  13. 2bay leaf
  14. 1star anise
  15. 3cloves
  16. 1 inchcinnamon stick
  17. 2green cardamom
  18. 1black cardamom
  19. 2Marathi moggu
  20. 1stone flower

Cooking Instructions

    Wash and soak basmati rice for 30 minutes. Take grated coconut in mixer jar, add water and extract coconut milk. Take coconut residue in mixer jar along with water and extract coconut milk again. Approximately it yields 1&1/2 cup coconut milk. Take extra 1&1/2 cup water for 1&1/2 cup rice.

    In a pressure cooker heat oil. Add cashews and fry until golden. Add in whole spices and sauté for 30 seconds until aromatic.

    Add in sliced onions and slit green chili. Sauté for a minute. Add ginger garlic paste and sauté until raw smell goes away.

    Add in soaked and drained basmati rice and sauté for a minute. Add in coconut milk, water and salt.

    Once it comes to boil. Close with pressure cooker lid and pressure cook for 1 whistle and switch off the flame. Wait until pressure settles down.

    Open the lid, add in ghee, chopped coriander and mint leaves. Gently fluff up the rice.
