Ingredients

30 minutes
5-6 servings
  1. 2 cupsSplit Black Gram or Urad Daal
  2. 1 tspSalt or to taste
  3. 3-4Green Chillies finely chopped
  4. 1Onion finely chopped
  5. 2 SprigsCurry Leaves torn
  6. 1 inchGinger grated
  7. 2 tbspCoriander Leaves chopped

Cooking Instructions

    Soak the dal for at least 3 to 4 hours. Or better still overnight. I usually do that to maintain the spongy and the super soft texture of these awesome looking Vadas.

    Grind it using minimum amount of water. The batter should be thick yet fluffy. Now add in all the other ingredients that are mentioned above. Mix well and set aside. Use your hands to mix it. It's always highly recommended by me because that way your Pakoras or Vadas will always turn out right. The heat of your hands will help in making the batter fluffy and perfect.

    Heat enough Oil for frying on a low heat. Wet your hands. Take a small portion of the thick batter and make a dent or a depression in the centre with your thumb. And then slowly slide each of them in hot Oil carefully.

    Fry few at a time until golden brown in colour on both the sides. Serve them piping hot alongside Coconut Chutney or Sambar. Enjoy!
