Ingredients

  1. 1medium size bowl of raw rice (appro. 7-8 cup of rice)
  2. Chicken parts
  3. Scotch bonnet as desired
  4. Salt as required
  5. Few cubes of knorr Seasoning
  6. 2big size onion bulbs
  7. Fresh garlic
  8. 3cooking spoon of canola oil or oil of choice
  9. Dried herbs and spices include:
  10. 1 tspRosemary
  11. 1 tbspBlack pepper
  12. 1 tspFennel seed
  13. 1 tspFenugreek
  14. Few pieces of clove's
  15. Dried Ginger
  16. 5 podCardamom
  17. 1 tsppowdered Cinnamon
  18. 1 tbspThyme
  19. 1 tsppowderedTumeric

Cooking Instructions

    Wash rice and strain in a colander, using pestle and mortar I grouded all my dried spices, chopped other ingredients. Boil chicken with onions, garlic and salt for. 15 minutes and keep aside.

    Add oil in a pot, when hot add onions and stirfry till soft

    Then add up the herbs on moderate heat.

    Stir occasionally untill mixture turn dark golden borwn, the essence of this fry is to explicitly bring out the flavor of the onions and herbs...

    Add the rice

    Add crushed scotch bonnet, knorr seasoning and sprinkle salt. Note do not add water... Mix and on low heat allow to steam for 10-15 min...this steaming makes the rice to capture all the flavor

    Then after 10-15 min pour in your Chicken and the broth, you can add water as required to cook the rice soft. Cover your pot and allow to cook on moderate heat..

    I don't want to exaggerate the flavor and texture of this rice just try... Bon appetit 😋
