Stir-Fried Water Spinach (Stir-Fried Ong Choy)

This is a dish I ate at a Taiwanese restaurant in Toyosu, so I decided to give making it a shot.
I recommend using garlic that comes in a tube. Cook it more or less as you like! Recipe by Izumisan
Cooking Instructions
- 1
First, go out and buy some water spinach. There wasn't any at the local supermarket, so I ordered some from a farm in Shizuoka through Rakuten.
- 2
Cut the water spinach. Cut the stems into about 3 cm lengths and the leaves into about 5 cm pieces (easy-to-eat sizes).
- 3
Heat the frying pan over high heat, add the sesame oil and finely chopped garlic, and the thinly sliced red chili peppers. Lightly stir-fry.
- 4
When the garlic has browned, add the stems. When they have cooked, add the leaves and stir-fry.
- 5
Once it comes out like this, it's ready. Season with some salt.

Stir-Fried Ong Choy (Chinese Water Spinach) with Leftover Chicken Skin Stir-Fried Ong Choy (Chinese Water Spinach) with Leftover Chicken Skin
I kept the chicken skin in the freezer because I didn't want to waste it. I just tried using it in a stir-fry, and it was delicious! It's surprisingly useful if you have some, so I recommend keeping it instead of throwing away.Since plenty of oil comes out from the chicken skin, you don't need to use vegetable oil. If you don't like a lot of oil, please wipe it off with a paper towel.Once you add vegetables, please stir-fry briefly. Recipe by Kaeha cookpad.japan -
