Suji Halwa also known as Sheera is a traditional Indian pudding made with semolina, ghee, sugar, cashews and raisins. This simple delicious dessert has a fluffy & soft texture with delicate flavors of cardamom & ghee. Suji halwa is made in many regions of India with more or less the same ingredients & similar method.

It is known as Sheera in Maharashtra, Karnataka and some parts of Andhra Pradesh. The same is known as Suji Halwa in North India. South Indian Rava Kesari or Kesari Bath is a variation of this which is made much the same way but with an addition of kesari color.

Sheera is most commonly offered to the Gods as Prasad or naivedya during festivals like Ganesh Chaturthi, Varalakshmi Pooja & Navratri. Some women even prepare this for their special weekly Pooja. It is eaten for breakfast, snack or as a dessert in a meal.

Ingredients

  1. 1/2cup suji / Semolina
  2. 2cup milk
  3. 1/2cup ghee
  4. 1/2cup sugar
  5. 2 tbspalmonds pieces
  6. 2 tbspcashew nuts pieces
  7. 2 tbsppistachios pieces
  8. 1 tbspraisins
  9. 1/2 tspcardamom powder
  10. For Garnishing
  11. As needed-Rosted dry fruits

Cooking Instructions

    First add the milk to a pan or skillet and heat on a medium flame.

    Now heat ghee in another pan, add almonds, cashews, pistachio pieces and raisins roast it. And separate it into a plate and keep it on the side.

    Now add semolina to the same ghee and fry on low flame till it turns light pink. Once the semolina is cooked, add a little hot milk and keep stirring. Cook until the semolina particles swell.

    Now when the semolina and milk are mixed evenly, add sugar and mix and keep stirring till the sugar water burns and leaves the surface of the pan and cook till the ghee is released. Now add cardamom powder and roasted dry fruit and mix well.

    Now our semolina Halwa is ready to serve. Pour the semolina veins into a bowl and garnish with roasted dry fruit.
