Roast & Bake whole Mutton Leg (Bakray ki raan)

This is must have dish after 2-3 weeks of Bakra Eid. And I usually wait for a holidays so everyone at home and enjoy this delicious meal. Usually, I steam it for 3-4 hrs and roast it in a pot but this time, i kept it for steam only for 1.5 hrs on low flame and then transfer it to baking dish and put it in oven for 1.5 hrs. After overnight marination with spices and yogurt and steaming process, made the meat more flavorful, juicy and tender.

Cooking Instructions

Clean the raan properly, wash it and dried it yo with kitchen towel. Put the cuts both sides.

Take a deep plate and add ginger paste, garlic paste, raw papaya and green Masala.

Add tikka masala, red chili powder and yogurt. Add salt.

And mix it well. Spread it on the raan and rub it with your hand.

Leave it for over marination in room temperature.
The next day, pour oil in big pot and put the whole raan in it. Cover it and cook on medium flame for 1.5 hrs. - 6
In the middle, turn it to other side. Poke with knife or fork and check the tenderness. If it is cook transfer it into baking tray. Spread leftover Masala mixture on it and put it in preheated oven at 200 C.
In the meanwhile, take the same pot, in the same oil put potatoes and cover it for a while. Once it’s soft add carrots and peas. Fry it for a while on high flame and transfer it into same baking tray. - 7
Bake it for more 15-20 mins. Then serve with mandi style rice, tomato chutney, salad and raita. My whole family enjoys it a lot.
