Christmas plum cake is a special cake prepared during Christmas time which is made using different fruits and dry fruits. Usually fruits are soaked in alcohol and eggs are used to prepare this cake. Here I have created an eggless and alcohol free version of the same cake which has come out perfectly.

Ingredients

  1. 300 mlorange juice
  2. 50 gramglazed cherries
  3. 50 gramraisins
  4. 50 gramsultanas
  5. 100 gramdates
  6. 50 gramtutti frutti
  7. 25 gramalmond
  8. 25 gramcashew nuts
  9. 275 gramall purpose flour
  10. 1 tspbaking powder
  11. 1/4 tspbaking soda
  12. 1/2 tspsalt
  13. 1 tspcinnamon powder
  14. 1 tspginger powder
  15. 1/4 tspclove powder
  16. 1/4 tspnutmeg powder
  17. 200 grambrown sugar
  18. 200 grambutter
  19. 2 tbsptreacle syrup or sugar caramel
  20. 1/2 cupyoghurt
  21. 2 tsporange zest
  22. 1 tsplemon zest

    Prepare all the dry fruits required for the cake. Now except almond and cashew nuts, soak all the fruits in orange juice overnight. The next day all the juice will be soaked in the fruits.

    Sieve flour, baking powder, baking soda, salt, cinnamon powder, clove powder, nutmeg and ginger powder together. Now in another bowl, take sugar and butter and beat it to make it creamy. Now add yoghurt, treacle syrup, orange zest and lemon zest to it and give it a good mix.

    Now start adding flour to the wet ingredients little at a time. After finishing adding all the flour, add soaked fruits with whatever orange is left inside it. Sprinkle some dry flour on almond and cashew nuts and mix it to the cake mix. Mix everything well.

    Grease and line the tins with baking paper. Divide the cake mix equally between the two tins. Add some fruits on top and tap it lightly. Bake in a preheated oven at 160 degree for 1 hour. I have used two loaf tins but you can even use one big round or square tin instead. Bigger tin will take little more baking time, so bake according.

    Serve this festive cake with tea or coffee or just as a snack.
