Ingredients

  1. 1 1/4 cupJamaican white over proof rum
  2. 1 1/4 cupport wine or red label wine
  3. 1/2 cupraisins
  4. 1/2 cupcurrants
  5. 1/2 cupdates
  6. 1/2 cupdried prunes
  7. 1/2 cupmaraschino cherries
  8. 1/2 cupchopped almonds
  9. 1 cuporange juice
  10. 1grated zest from one lime
  11. 1 cupdark molasses
  12. 2 tbsbrowning
  13. 1 tbslime juice
  14. 1 tspvanilla extract
  15. 1 tspalmond extract
  16. 9eggs
  17. 2 cupsbutter
  18. 2 1/2 cupsflour
  19. 2 cupsbrown sugar
  20. 3 tspbaking powder
  21. 1/2 tspground nutmeg
  22. 1/2 tspground all spice
  23. 1/2 tspground clove
  24. 1/2 tspground cinnamon
  25. Pinchsalt

Cooking Instructions

    Preheat oven to 350 degree then grease and flour 2 round baking pans or which size pan u choose.

    In a blender add rum, wine, dates, raisins,cherries with their liquid, prunes, currants, chopped almond, orange juice and blend until all the fruits are chopped. Let sit for 1hr (2days is way better 😀)

    In a large bowl cream sugar and butter. Then add eggs mix well

    Add molasses, browning, blended fruit mixture, lime juice, vanilla, almond extract and stir

    Add flour, nutmeg, cloves, all spice, baking powder, cinnamon, salt, lime zest and stir. Do not over mix

  6. 6

    Pour the batter into your baking pans and bake for 1hr. You can put some cherries in the center of the batter if you wish. Stick a toothpick in the middle to ensure it's done. Tooth pick will come out clean if it's done. Enjoy!
