  1. 6sandwich bread slices
  2. 3 tbspeggless mayonnaise
  3. 1onion chopped finely
  4. 1small capsicum finely chopped
  5. 2 tbspcoriander chopped
  6. 1/4 tsporegano
  7. For green chutney:
  8. 1 cupcoriander chopped
  9. 1/4 tspginger paste
  10. 1 tsptamarind chutney
  11. 1 tsplemon juice
  12. 1 tbspnamkeen sev or roasted peanuts
  13. 1/4 tspblack salt
  14. 1green chilli

    In a mixing bowl, add grated carrot, finely chopped onion,spring onion, tomato and chopped coriander.Other vegetables of choice like cabbage,sweet corn,cucumber etc may be added. Add mayonnaise, chopped green chilli,chilli flakes,oregano,black pepper powder,chaat masala and salt to taste.Mix all till well combined. The filling for sandwich is ready.

    For green chutney : Add chopped coriander in a blender jar.Add ginger garlic paste, tamarind chutney, lemon juice,green chilli,salt to taste and namkeen sev or roasted peanuts. Sprinkle a tbsp of water and grind to a fine paste. Green chutney is ready.

    Lightly butter on both sides of bread. Smear green chutney on one slice and tomato ketchup on another slice.Add 2 tbsp of mayonnaise mixed vegetables on one slice and lightly press the other slice on it.Heat a grill pan and toast the bread.When one side is done,flip and toast pressing it lightly on the grill till the other side is light brown and crispy.

    Slice diagonally the sandwiches and serve hot with green chutney and tomato ketchup for breakfast,brunch, or enjoy as a teatime snack.
