Glass Noodles with Shrimp & Bok choy

These glass noodles are made with sweet potato (gluten free) and can be cooked with a variety of fresh vegetables or proteins. Use whatever you like or have on hand.
Cooking Instructions

Soak the dried glass noodles in hot water for 30 minutes as you prep. If using dried shiitake mushrooms, soak in hot water 15 min before slicing.

Heat the oil in a large non-stick pan over medium heat. Saute onion, red bell pepper and ginger until softened, a few minutes.

Add garlic and red pepper flakes, mix well and cook 1 minute.

Add sliced bok choy and mushrooms, mix well, cook one minute.

Add soy sauce, soaked noodles and about 3/4 cup of stock. (Save the rest to use if needed.)
Mix well, cover and reduce heat. Cook for a few minutes - noodles will absorb stock. - 6
Add shrimp, mix well, adding more stock if needed.

Cover and cook until shrimp are done (turn pink), about 3 minutes.
Serve with lemon wedges. Enjoy!
