Ingredients

  1. 1 cupquinoa
  2. 1/2 cupcorn boiled
  3. 1red onion
  4. 1/4 cupred capsicum
  5. 1/4 cupgreen capsicum
  6. 1/4 cupcucumber
  7. 1 cupcooked black beans
  8. 2tomatoes
  9. 1avocado
  10. 1/4 cupfresh coriander
  11. 1jalapeño
  12. 2limes
  13. 2 tablespoonolive oil
  14. 1 teaspoonchilli flakes
  15. salt to taste
  16. 1/4 teaspoonpepper
  17. 1 tablespoonghee
  18. 1/2 teaspooncumin seeds

Cooking Instructions

    In a bowl add quinoa and add 2 cups water to it. Let it soak for 5 minutes. Remove water from it and add 1 1/2 cup of water to it.

    In a pressure cooker add ghee and cumin seeds on medium heat. Once the ghee is melted and cumin changes colour add the quinoa with water to the melted ghee and add salt to taste. Close the lid and pressure cook 2 whistles. Let it cool until the pressure is released.

    In a bowl add finely chopped red onions, tomatoes, jalapeño, capsicum, cucumber, avocado and coriander. Add lemon juice, olive oil, black pepper, corn, black beans and mix well.

    Open the pressure cooker lid and fluff the quinoa using a fork. Add to the chopped vegetables and mix well. Sprinkle some chilli flakes and enjoy.
