Well detailed off course (I have been wanting to make a well detailed jollof rice recipe but I never get to do that till now excited😍🔥🏂
Cooking Instructions

In a pot add your veg oil allow to heat up slightly then add your onions allow to fry a bit

Then add your garlic and ginger paste then mix add curry thyme & bay leaves, oregano

Mix together and add your tomato paste mix together and fry for 4 min

Then add peas mix together until oil started floating on top of the stew then add your washed rice, mix together with wooden spatula and add hot water and cover to cook

Then add your pepper blend add seasoning powder add salt and jollof spice

When your rice is cooked add butter stir a add tomato slice turn of the heat and serve.

Enjoyyy with salad & protein of your choice

This dish, which kind of falls somewhere between paella and jambalaya, was a happy accident. It came about a few nights ago, when I repurposed some leftover tomato pilaf (I've been all about pilaf lately). Rather than simply nuking the rice, I dumped it into a pan and sprinkled on some homemade fajita spice. The result was amazing, way beyond what I expected. The rice was fluffy, soft but my mushy, super-flavourful, and even formed a bit of oh-so-irresistible socarrat (the crusty, crunchy bottom of a paella that everyone fights over). I decided to repeat the dish, but with a few extra ingredients. Once again, it turned out fantastic. The only niggle was that the socarrat wasn't quite as prominent (as you can see in the picture). Dinner was running late and I had to get food on the table... what's a cook to do? Nobody seemed to mind, anyway. They were too busy devouring delicious rice. Robert Gonzal -

Frozen corn, but no peas, taste great, use it.Since this is using one pan and you are cooking the rice in it, you are getting the extra flavor in the rice from the ingredients, and less clean up.
