This easy egg rice is something that I used to cook for my son's lunch box. Easy to prepare and a good lunch box recipe too.

Ingredients

  1. 1 cupCooked rice
  2. 3-4Eggs
  3. 3-4Green chilli
  4. 1Onion medium size
  5. 1 inch pieceGinger
  6. 3-4 clovesGarlic
  7. 1 tspPepper powder
  8. 1/2 tspGaram masala
  9. 1-2 tbspGhee
  10. as requiredSalt to taste
  11. Pinchturmeric powder
  12. as requiredCoriander leaves for garnishing

Cooking Instructions

    Finely chop onion, ginger, garlic and green chilli.

    Wash rice and cook in pressure cooker with 2 cups of water for 2-3 whistles. Let it cool for sometime.

    Heat ghee in kadai, add chopped garlic, fry for few seconds, then add ginger and green chilli, fry till raw smell goes, then add onion fry till light pink, add pepper powder, pinch of turmeric, garam masala, salt and pinch of turmeric powder, fry for few seconds. Add eggs fry for few seconds, Then add cooked rice, mix nicely. Then add chopped coriander leaves.
