Ingredients

35 minutes

  1. 1 litreFull cream milk
  2. 2 tbspBasmati rice
  3. 10 strandsSaffron strands
  4. 3 tbspSugar
  5. 4Green cardamoms
  6. 10Almonds
  7. 10Pistachio
  8. 10Cashew nuts
  9. 4Walnuts
  10. 20Raisins
  11. 1 tspMelon seeds

Cooking Instructions

    Boil milk in a pan. Wash and soak rice in little water for 10 minutes. Chop almonds, cashew nuts, walnuts. Coarsely grind green cardamoms.

    Lower the flame and let the milk simmer on low flame for 10 minutes. It will turn little thick. Scrap the malai from the edges of pan and mix well with milk.

    Now add soaked rice and mix well. Let it cook on low flame in milk for 10 minutes or till rice grain turn soft. Stir in between.

    Add saffron strands and coarsely grinded green cardamoms and mix. Let it simmer on low flame till saffron leaves its colour. Then add sugar and stir well. Cook for 2 minutes while stirring so that sugar dissolves completely.

    Now add all dry fruits (leaving some for garnishing). Stir well and switch off the flame.

    Serve hot or cold as per choice garnished with chopped dry fruits.
