Ingredients

  1. 12 piecesMutton trotters/paya
  2. 1medium size onion
  3. 1 tbspchopped ginger garlic
  4. 1tomato chopped
  5. 1 tspginger garlic paste
  6. 1 handfulchopped coriander
  7. 1 tspcrushed kasuri methi
  8. 1/4th cup lumpfree thick yoghurt
  9. 2bay leaves
  10. 1 tspcrushed pepper corn
  11. 3-4green cardamoms
  12. 4cloves
  13. 1 tspgaram masala
  14. 1/2 tspred chilli powder
  15. 1/2 tspturmeric powder
  16. 1 tbspghee
  17. 1 tbspor as required lemon juice
  18. Salt to taste

Cooking Instructions

    Clean mutton trotters, pour hot water on them and let them soak for 15 minutes.

    Discard water, rinse them again.

  3. 3

    In a pan heat up ghee, add bay leaves and other whole garam masalas.

  4. 4

    Add chopped ginger garlic followed by onions. Fry till they turn brown.

    Add mutton trotters, salt and turmeric and fry on medium high heat. Add ginger garlic paste and 1 tbsp chopped coriander.

    Add tomatoes, followed by chilli powder, garam masala powder.

    When tomatoes get soft, add yoghurt and kasuri methi.

    Add around 2 liters of hot water and combine well. Transfer it in the pressure cooker.

    Let it cook in slow flame at least for 1 hour or till the flush starts separating from the bones. Add crushed pepper corn.

    Serve it piping hot after adding some lemon juice and coriander leaves.
