Ingredients

  2. 150 gDigestive biscuit
  3. 75 gUnsalted butter, melted
  4. 1.5 tbspSugar
  5. Pinchsalt
  6. Cream cheese batter
  7. 240 gCream cheese
  8. 125 gGreek yogurt
  9. 45 gIcing
  10. 140 gWhipped cream
  11. 1 tbspLemon juice
  12. 1 tspVanilla extract
  13. Strawberry sauce
  14. 150 gStrawberry
  15. 3 tbspSugar

Cooking Instructions

    In a zip lock bag, crumble digestive biscuit with rolling pin. Add melted butter, mix well. Add sugar and salt. Mix thoroughly.

    Add base mixture into prepared containers and use a spoon or a small pestle to press firmly down into the base. Chill in the fridge for 1 hr to set.

    In the other bowl, cream the whipping cream with electric mixer until it thicken to soft peaks.

    Prepare cream cheese batter : Bring a large bowl. Add cream cheese and stir with electric mixer until smooth. Add greek yoghurt, icing, vanilla extract, and lemon juice. Mix well. Gently add whipping cream to the mixture. Mix thoroughly with spatula.

    After the base is set. Add cream cheese batter in containers. Keep in the fridge for 1-2 hour until set.

    Prepare strawberry sauce: clean, trim and chop strawberry into small cubes. Heat the saucepan with medium heat. Add strawberry and sugar. Bring it to boil. Turn to low heat and keep stirring until sauce is thickened. Turn of the heat.

    Transfer to a food container to cool down.

    When the cheesecake is set, put strawberry sauce on the cake. Serve.
