The secret that makes masoor dal special lies in its tadka. A traditional Bengali style simple masoor dal or red lentil recipe gets a dramatic impact the moment ghee hits the pan.The tadka begins its wonder when chopped garlic comes in contact with the sizzling hot oil and fills the kitchen with a nice aroma. The spices then join to enrich the dal with aromatic cumin seeds, green and dry red chillies and colourful Kashmiri Red Chilli Powder.Fresh herbs like chopped coriander makes the dal all the more flavourful.

Ingredients

  1. 1/2 cupMasoor Dal (Red Lentils)
  2. 1/2 tspsalt or to taste
  3. 1/2 tspturmeric powder
  4. 1/2 tspKashmiri Red Chilli Powder
  5. 1dry red chilli
  6. 1/2 tspcumin seeds
  7. 1small onion chopped finely
  8. 4fat garlic cloves minced
  9. 1 tbspghee
  10. 1 tspoil
  11. 3-4green chillies
  12. 1 tbspcoriander leaves chopped finely
  13. 2 cupswater or as needed

Cooking Instructions

    Wash the lentils and drain water.Pressure cook dal with 2 cups water upto 2 whistles with 1/2 tsp turmeric powder, 1/2 tsp ghee and 1/2 tsp salt.Open lid after 2 minutes. Heat 1 tsp oil in a wok and sprinkle cumin seeds and 1 broken dry red chilli.

    When they splutter, add finely chopped onion and saute till translucent. Pour the cooked dal over it and cook for 5 minutes. Adjust consistency of dal according to need and add water accordingly.

    To prepare the tadka, place another pan on medium heat and 1 tsp ghee.Add the chopped garlic.Fry till light brown. Then add 1/4 tsp cumin seeds and stir till they splutter.Add Kashmiri Red Chilli Powder and stir quickly. Pour the tadka on top of the cooked lentils.Add few slit green chillies and mix well.Garnish with chopped coriander. Serve delicious masoor dal tadka with rice or roti in lunch or dinner.
