Cooking Instructions

Wash the amlas thoroughly and steam whole amlas for about 10-12 minutes. Roughly grind the spices as nd raw sugar in a mixture jar and keep aside. Take the steamed amla and deseed them as they cool down.

Now heat up oil in a pan/kadai on medium low heat. Once the oil is hot, temper with black mustard seeds and wait a few seconds till they start to crackle.Add the rest of the ground spices and hing all together and let crackle in oil taking care not to burn them.

Add the sliced amla next. Sprinkle red chilli powder and salt. Mix the amla with spices. let cook for 5-6 minutes till the amla slices are starting to warm through. Next add raw sugar powder and you will notice the launji will get runny. Now cook on medium low heat for 8 to 10 minutes or until amla is tender to your liking.

Switch off the stove,mix in the kala namak and lemon juice. Launji will be a bit runny but it will thicken as it cools.

Our Amla ki launji is ready. Store in clean and air tight glass container and enjoy with roti or paratha as a pickle.

They are equally good for our hair / scalp, heart, controls blood sugar and is also good for the tummy. Hence it is recommended in our daily diet. So let me share a simple rasam (soup) that I made out of some amla. It can be enjoyed as a piping hot soup during winter, as an appetizer or as a side dish with plain steamed rice.
