Ridge gourd fritters is a quick snack recipe with very little ingredients. We can make them as a side dish at lunch or dinner. But we prefer it as a snacking time... ☺

Ingredients

  1. 1Tender ridge gourd
  2. 1 cupgram dal flour (Besan)
  3. 3 tspRed chili powder
  4. 1 tsp turneric powder
  5. 3 tsp Salt
  6. Oil for cooking
  7. 2 tsp very hot oul for mohan

    Initially wash ridge gourd with water. Peel outer skin of ridge gourd delicately with the help of knife. Or You can keep skin as it is also. But I have peeled it off. Cut ridge gourd like slices.

    Now in a bowl, add besan + red chili powder + turmeric powder + salt + water. Mix all ingredients well. Cover & keep it aside.

    Heat cooking oil in a pan Or kadhai. Once oil is heated, add 2 tsp very hot oil into the besan batter. It makes fritters crisp. You may add cooking soda as well. But I mein using hot oil instead of soda.

    Add little water into batter & make appropriate consistency of batter. Add cut pieces of ridge gourd into batter. Coat each slice with batter & drop into hot oil. Fry over high to medium flame.

    Fritters puffs up nicely. Fry them until brown & crisp. Take out from pan. Sprinkle chat masala on fritters. Serve with tomato sauce & hot cup of tea.
