Rajgira Sheera, also known as Rajgara no Sheero, is a traditional Indian fasting sweet that's both delicious and gluten-free. It's commonly served on Vrat days, such as Navratri, Shivratri, and Ekadashi. This sweet dish is also an excellent option for those with gluten intolerance.
Rajgira, the primary ingredient, is known as Ramdana in North India and Amaranth in English. This gluten-free grain is rich in calcium, protein, amino acids, iron, magnesium, and vitamins A, B, and C.
The preparation process is similar to that of "atta halwa." You can quickly make this sheera in under 30 minutes.

Cooking Instructions

Heat ghee in a thick-bottomed pan and add rajgira flour. Sauté on a low flame until it turns aromatic.

Dissolve jaggery in 1.5 cups of water and heat it until the jaggery melts. Keep aside.

Once the rajgira flour is sautéed, add the jaggery water and stir continuously.

Cook on a low flame until the halwa leaves the sides of the pan.

Finally, add cardamom powder and almond flakes. Mix and turn off the heat.

Serve hot.
Notes:
- You can replace jaggery with sugar if preferred.
- Feel free to add your choice of dry fruits to the recipe.
