Gatte ki sabji (Besan ke gatte)
A traditional Rajasthani curry Recipe made with besan sausages cooked in a spicy yogurt based gravy. the recipe is generally made without a tomato and onion based gravy with curd as its base for the dish. hence it is also popularly known as rajasthani gatte ki kadhi recipe.

Gatte ki sabji (Besan ke gatte)
A traditional Rajasthani curry Recipe made with besan sausages cooked in a spicy yogurt based gravy. the recipe is generally made without a tomato and onion based gravy with curd as its base for the dish. hence it is also popularly known as rajasthani gatte ki kadhi recipe.
Cooking Instructions

To prepare gatte / gram flour dumpling:-
firstly, in a large bowl take 1 cup besan. - 2
Also add ½ tsp coriander seeds, ¼ tsp ajwain, ¼ tsp turmeric, ¼ tsp chilli powder, pinch hing, ¼ tsp salt, 2 tbsp ghee and 2 tbsp curd.
mix well making sure the dough turns moist and all spices are mixed well. - 3
Further, add 2 tbsp water or as required and knead the dough for 5 minutes.
knead to smooth and soft dough adding oil to prevent from sticking to hands.Now pinch a ball sized dough and prepare cylindrical logs.In a large vessel boil 4 cups of water. - 4
Once the water comes to a boil, drop in prepared besan dough.boil for 10 minutes, without disturbing.

Once the besan dough is cooked, it starts to float.Drain off the gatte (boiled besan dough) into a plate.Now cut the gatte into small pieces and keep aside

Firstly, in a large kadai heat 2 tbsp oil and saute spices.
further, add 1 onion, 1 tsp ginger garlic paste and saute to golden brown.
keeping the flame on low, add spices and saute well. - 7
Furthermore, add 1 cup water and 1 cup curd. stir continuously until the mixture comes to a boil.
now add prepare gatte (gram flour dumplings) and ½ tsp salt. mix well.
cover and boil for 5 minutes. - 8
Additionally, add ¼ tsp garam masala and 2 tbsp coriander. mix well.

Finally, serve gatte ki sabji with Roti, pulao, paratha and jowar Bhakri

I had made this Palak kofta curry for dinner last night. Koftas turned out really delicious. My son gobbled up a couple of koftas just like that... said they tasted good as is and didn't want to wait until the curry was ready. The spices in the gravy were well balanced. Koftas had a thin crispy covering with soft flavourful center..Flashback⏪, my mom used to make palak kofta curry when I was a little girl. My last attempt at making these koftas was way back in 2001. As a newly-wed I wanted to impress hubby dear.😉 Needless to say, the curry did not turn out the way I had imagined or remembered how it tasted when mom made. Unfortunately, picking up phone & making a call across oceans, every time I attempted something to cook was not an option back then...blame it on time zone difference and high international call rates.😆.Current day⏩, years of experience and confidence in my cooking skills and a zeal for variety in my meals got me to making these palak koftas again.
